Use a peeler or knife to chop very finely

Fry pan

A large saucepan
Measuring Cup A small coffee mug - use the same mug to measure everything in the recipe
Oven mitt  Dry folded tea towel or hand towel
Saucepan lid Cover with foil, a dinner plate or roasting pan
Strainer Lid or plate over the pot with a small gap to pour the water out (Watch out for the steam!)
Whisk Fork
Wooden spoon Spatula, fork or butter knife
Zester Finest side of a grater

Basil Oregano or thyme
Brown sugar White sugar
Cinnamon 1/4 the amount of allspice or nutmeg
Cream       Evaporated milk or milk with a little flour mixed in
Fresh herbs Dried Herbs
Honey 1 1/4 cup sugar dissolved in 1/4 cup hot water
Lemon Juice Vinegar
Olive oil Vegetable oil
Red wine Beef stock or water
Sour Cream Plain Yogurt

White wine Apple Juice, chicken stock or water

  • Broccoli, cauliflower, cabbage, green beans
  • Potato, sweet potato, pumpkin, carrots
  • Snow peas, sugar snap peas, green beans, asparagus
  • Red onion, white onion, brown onion, shallots
  • Zucchini, squash, eggplant
  • Cabbage, spinach, pak choy 

The following fruit can be substituted for each other depending on seasonality and price as they have similar flavor and texture.

  • Green apples, red apples, pears
  • Grapes, strawberries, cherries
  • Lemon, lime, orange, grapefruit
  • Watermelon, honeydew melon, rockmelon, kiwifruit
  • Sultanas, dried apricots, dried apples, mixed dried fruit
